Vegan Ricotta Toast – Two Ways

Move over avocado…there’s a new toast in town! If you’re looking for an easy breakfast or snack idea, try this Vegan Ricotta Toast!

This toast is super tasty with either almond ricotta or cashew ricotta and so simple to make!

First, whip up a batch of vegan ricotta (they both keep for up to 5 days in the fridge).

Then, toast a slice of your favorite bread. I used oil-free, vegan sourdough in the video and gluten-free millet bread in the photos.

Next, spread about 2 tablespoons of vegan ricotta onto the piece of toast.

Now choose your flavor…

Toast #1: Blueberry-Lemon – Top your toast with fresh blueberries, maple syrup, and lemon zest.

Toast #2: Strawberry-Balsamic – Top your toast with sliced strawberries, balsamic glaze, and fresh basil.
